Jerusalem artichoke, Helianthus tuberosus
These stately fall-blooming native plants are members of the
Sunflower Family. Native Americans traditionally used the starchy
roots as a vegetable. In modern Europe, Jerusalem Artichoke tubers
are sold in the marketplace.
