Jerusalem Artichoke, Helianthus tuberosus

These tall, late-blooming wildflowers sometimes grow in dense stands, lighting up the edges of meadows. There are Jerusalem Artichokes growing in a number of sites at Fresh Pond Reservation. In European countries the tubers are eaten as a root vegetable, but in this country they are seldom grown for market.
