Jerusalem Artichoke, Helianthus tuberosus

When these tall (6 to 10 foot) plants grow in stands of several hundred plants, their large ( 2 to 3 inch) flowers light up the late-summer landscape. Their name alludes to the fact that the root is edible. In Europe the plants are grown commercially for their roots.
